Portuguese Walnut Squares Recipe
For the Squares
1/2 cup unsalted butter(1 stick), softened
3/4 cup dark brown sugar
1 egg, lightly beaten
1/2 teaspoon vanilla
2 tablespoons milk
4 tablespoons port wine
1 cup chopped walnuts
6 tablespoons flour
1/2 teaspoon baking powder
Preheat the oven to 350� F. Grease and flour a 9-inch square pan.
In the bowl of a standing mixer, beat the butter and brown sugar until fluffy.
Add the egg, vanilla, milk, and 2 tablespoons of the wine and beat at low to
medium speed until combined.
In a separate bowl, combine the walnuts, flour, and baking powder. Using a
wooden spoon, fold the walnut and flour mixture into the butter mixture. Do not
overmix.
Pour the batter into the pan and bake for 15 to 20 minutes, until a toothpick
comes out clean. As soon as you take the pan out of the oven, brush the top with
the remaining 2 tablespoons of wine.
For the Icing
1 cup confectioner's sugar
1 tablespoon unsalted butter, softened
1 tablespoon port wine
In the bowl of a standing mixer, or using a handheld mixer, beat the sugar,
butter, and wine until the mixture is soft enough to spread.
When the cake has cooled slightly, spread the icing over the top. If the icing
gets too stiff to spread, you can soften it by putting it in the microwave at
high heat for about 10 seconds.
When the frosting has set, cut 30 squares, remove from pan, and set on a rack to
cool completely. (You can help the icing set by putting the pan in the
refrigerator for 1/2 hour.)
Makes 30 squares.
