Onion Caviar Recipe

1 cup diced onions
1 1/3 cups cooked black-eyed peas
1 small can diced pimento, drained
1 cup diced red bell pepper
1/2 cup minced green onion
1 ounce (about half a bulb ) chopped fresh garlic
1/4 cup fresh chopped jalape�o peppers
(optional)
1/4 cup Italian salad dressing
Salt and pepper to taste


Combine ingredients. Allow to marinate overnight for best flavor. Serve as a side dish or as an appetizer with low-fat crackers.
