Heloise's Candied Fruit Peel Recipe

Fruit peels (lemon -- oranges and grapefruit)

1 cup water

1/4 cup corn syrup

2 cups sugar

Wash and dice the peels of lemons, oranges and grapefruits as you collect them in the freezer in freezer-safe containers. When you have peelings from 4 of each of the fruits, you are ready to start.

Slowly bring to a boil the water, corn syrup and sugar for 30 minutes over low heat. Then add peels and cook for 55 minutes to an hour until all the syrup has been absorbed.

Lay out on a large piece of waxed paper and sprinkle liberally with sugar. Put the candied peel on the waxed paper and toss so the peels will be covered. Let it sit for a day or two to dry.

The candied peel will then keep indefinitely in the refrigerator. It's so good and easy to make.
