Quick Gooey Butter Coffee Cake
In another bowl, combine cream cheese, remaining 2 eggs, vanilla and the powdered sugar minus 2 tbsp. Mix well and spread over batter in pan.
Bake 15 minutes. Remove cake from oven and sprinkle reserved 2 tbsp powdered sugar on top. Return to oven and bake 25 minutes longer. Do not overbake or topping will not be gooey.
Note: This coffee cake is good cold, but much better warm.
