8 ounces Mazipan or
almond paste (I use almond paste)
1 cup sugar, plus extra for top of cookies
2 egg whites
Preheat oven 375º. Lightly grease 2 baking sheets with Crisco.
In large bowl, combine marzipan with 1 cup sugar. Using electric mixer on low
speed, beat until mixture looks like sugar granules. Add egg whites in two
stages, mixing well after each stage. Increase speed to medium and beat until
Fill pastry bag with mixture, and fit bag with 1/2 inch round tip. Pipe mixture
onto baking sheets in 2 inch round spaced around 1 inch apart. Lightly press
down with a damp teaspoon on surface of cookies to smooth the surface.
Sprinkle cookies with sugar. Bake 15 minutes, or until lightly brown.
