Chewy Oatmeal Cookies
1 1/4 cups firmly packed brown sugar
1/2 cup shortening
1/4 cup softened butter
1/3 cup milk
1 egg
1 1/2 teaspoons vanilla
3 cups quick-cooking oats
1 cup flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon ground cinnamon
1 cup raisins
1 cup chopped walnuts
Preheat oven to 350�F. Lightly grease cookie sheets. In a large bowl, beat brown
sugar, shortening and butter until smooth Add milk, egg and vanilla and stir
until well combined; set aside. In a medium bowl, mix together oats, flour,
baking soda, salt and cinnamon. Stir into wet ingredients until thoroughly
mixed. Blend in raisins and walnuts. Drop by rounded teaspoon onto prepared
cookie sheets and bake 10-12 minutes or until lightly browned. Cool slightly
before removing cookies from sheets to wire rack. Optionally you can stir in 1
cup of cinnamon chips. |
