Chinese Almond Cookies
2 1/4 c. flour
1 c. sugar
1/2 tsp. soda
11/2 tsp. salt
1 c. butter, margarine or lard
1 egg, slightly beaten
1 tsp. almond extract
1/3 c. whole blanched almonds,
Sift dry ingredients together into bowl. Cut butter until mixture resembles corn
meal. Add egg and almond extract; mix well. Gather up with fingers; form into
Roll to slightly less than 1/4-inch; cut with 2-inch round
cutter. Place on ungreased cookie sheet about 2-inches apart or form in 1-inch
balls; flatten on cookie sheet with bottom of floured tumbler. Place almond half
atop each cookie.
Bake at 325 degrees for 15 to 20 minutes.
