Rosie's Chocolate Chocolate Chip Cookies
Melt unsweetened chocolate in microwave, then let cool slightly.
Sift flour, baking soda and salt together and set aside.
On medium speed, cream butter and both sugars until light and fluffy. Scrape down sides.
Add eggs and egg yolk and beat on medium speed until blended. Add melted chocolate and blend until mixed.
Add flour and mix on low speed until incorporated. Add chocolate chips and stir by hand.
Drop dough by generous tablespoons onto prepared baking sheets 2" apart.
Bake until puffed and lightly cracked, 12-13 minutes.
Store airtight in freezer up to 2 weeks. Bring to room temp before eating.
Makes 24 lg cookies.
