Lemon Butter Cookies
1/2 cup butter, softened
1/4 cup sugar
1 teaspoon vanilla
1 cup flour
1 tablespoon finely grated lemon zest
Cream together butter, sugar and vanilla. Beat in flour until blended. Beat in
lemon zest until blended. Shape 1 heaping teaspoon of dough into a ball and
flatten to a 1" round.
Place on a lightly greased cookie sheet and bake at 325ºF
until dough is set and just beginning to take on color. Do not allow cookies to
get brown. Allow to cool and sprinkle with powdered sugar.
Yields about 36 cookies.
