Lemon Cream Cheese Bars
1 box yellow
8 ounce package cream cheese, softened
1/4 cup sugar
1 tbs. fresh or bottled lemon juice
1/3 cup oil
Preheat oven to 350 degrees. Use 9x13 ungreased pan.
Mix dry cake mix, 1 of the eggs, and 1/3 cup of oil until crumbly. Reserve one
cup of this mixture. Pat the remaining mixture lightly in pan. Bake 15 minutes
While this is baking beat cream cheese, sugar, lemon juice and the remaining egg
until light and smooth. Spread over baked crumb mixture. Sprinkle reserved crumb
mixture on top and bake 15 minutes longer. DO NOT OVERBAKE. Will be light golden
Chill thoroughly and cut as desired.
