Molasses Oatmeal Raisin Cookies
1 cup butter, softened
3/4 cup sugar
3/4 cup molasses
1 egg
1 teaspoon vanilla
1 1/2 cups flour
1/2 cup whole wheat flour
1 teaspoon baking soda
1/4 teaspoon salt
1 1/2 cups quick cooking oats
1 1/4 cups raisins
1/4 cup sugar
2 teaspoons ground cinnamon
Beat butter and 3/4 cup sugar until fluffy. Mix in molasses, then egg and
vanilla. Add flours, baking soda, salt, mixing well. Stir in oats and raisins.
Combine 1/4 cup sugar and cinnamon, stir well. Shape dough in 1-inch balls, roll
in cinnamon / sugar mixture. Place 2 inches apart on cookie sheets Bake at 375�F
oven for 7-9 minutes until light brown. |
