Orange Marmalade Cookies
1/2 cup butter
1 cup granulated sugar
2 eggs, well beaten
3 cups sifted flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup thick orange marmalade
Cream butter. Add sugar and continue beating until light and fluffy. Mix in
eggs. Beat in flour, soda and salt. Drop by teaspoonsful 1 inch apart on a
well-buttered cookie sheet. Bake at 350 degrees for 10 to 12 minutes. Remove and
cool. Cover with Orange Icing.
Makes about 3 dozen cookies.
Orange Icing
1/4 cup orange juice
1 teaspoon lemon juice
2 teaspoons grated orange peel
1 teaspoon grated lemon peel
3 tablespoons soft butter
3 cups confectioners' sugar
1/8 teaspoon salt
Mix juices and peels. Cream butter and sugar. Mix the two together and blend
until smooth. Add in salt and mix until spreading consistency. |
