Banana Cake with Cinnamon Streusel
STREUSEL:
1/4 cup packed light brown sugar
1/3 cup matzo meal
1/2 teaspoon ground cinnamon
2 tablespoons melted butter, nondairy margarine or vegetable oil
CAKE:
6 large eggs, separated
3/4 cup sugar (divided use)
2 teaspoons vanilla extract
1/2 teaspoon salt
1/2 cup matzo meal
1/2 cup potato starch
4 ripe bananas (divided use)
Preheat oven to 325 degrees. Grease a 9x13 baking dish.
For streusel: Mix together brown sugar, matzo meal and cinnamon. Add
butter or oil, and mix until crumbly.
For cake: Beat egg yolks with 1/2 cup sugar until very thick and
light
colored, about 1 minute.
Add vanilla, salt, matzo meal and potato starch.
Chop 2 of the bananas and add to yolk mixture. Mix until
well-blended
and bananas are pureed.
In clean mixing bowl, mix egg whites until soft peaks form. Slowly
add remaining 1/4 cup sugar, beating until whites hold stiff, but
not dry, peaks.
Slice remaining 2 bananas. Pour yolk mixture and bananas over
whites.
Mix on low speed or fold in until incorporated.
Pour batter into the prepared pan. Sprinkle streusel over the top.
Bake in center of oven for 30 minutes or until golden and toothpick
inserted in center comes out dry.
