Chocolate Chunk Passover Cookies
4 ounces butter or margarine
1 cup sugar
2 eggs
1 teaspoon vanilla
� cup potato starch
1 cup Passover cake meal
8 ounces semisweet chocolate cut into �-inch chunks (can use chips)
� Preheat oven to 350 degrees.
� Cream butter or margarine and sugar together. Add eggs and vanilla
and blend until smooth.
� Add potato starch and cake meal and mix well. Do not over mix. Add
chocolate.
� Drop by tablespoons onto greased cookie sheet or parchment paper.
Or shape into 1 �-inch-thick log and cut into �-inch slices.
� Bake for 13 minutes.
Yield: 2 dozen cookies
