Dad's Fried Matzo

1/2 lb. matzo

8 eggs, beaten

3 tbsp. oil or nyia fat*

salt and pepper to taste

* You can use spray oil instead of the fat.

Fully wet matzo and drain in strainer. Add eggs and mix to make a batter. Season with salt and pepper. Spray a large frying pan and heat. Drop approximately 1/4 cup of batter and flatten to make a pancake-sized portion. Let it cook until firm and flip over and brown lightly.
