Matzo and Cheese Casserole

Blintz souffle or blintz casserole is a year-round Jewish dairy staple - except, of course, at Passover. This version, adapted from a recipe in Susan Friedland's ``The Passover Table'' (HarperCollins, 1994), uses guess-what instead of blintzes.

Preheat the oven to 350 degrees and lightly grease a shallow baking dish.

Beat together 5 eggs and 1 c. milk.

Add 1 lb. cottage cheese, 1 t. salt, 1/4 c. honey and 1/2 t. ground cinnamon.

Place 2 broken-up matzos in the baking dish.

Pour half the egg mixture on top.

Sprinkle with 1/2 c. toasted almonds.

Cover with 2 more broken-up matzos and the rest of the egg mixture.

Bake for about 40 minutes, until the top is brown.
