6 matzos, whole sheets
2 tablespoons oil
1/4 teaspoon margarine
1 large onion, chopped
3 stalks celery, chopped
2 large eggs, beaten
1 teaspoon salt
1/4 teaspoon white pepper
Preheat oven to 350 degrees F.
Grease a 1-qt casserole.
Break up matzo and soak in 1 cup warm water til soft. Squeeze out
water. Heat oil and margarine in medium skillet over medium- high
heat. Saute onion and celery til soft, add matzos and cook 5 minutes
longer. Add beaten eggs, salt, and pepper.
Turn into the casserole and bake, covered for 30 minutes. Uncover,
