Sweet Potato and Apple Latkes
4 cups sweet potatoes, grated
1 green apple, grated
1/4 cup flour
1/2 cup fresh chives, chopped
1 tablespoon fresh parsley, chopped
1 tablespoon lemon juice
1/4 cup flour
1/2 teaspoon cinnamon
Dash of nutmeg
2 egg whites, beaten
Salt and pepper to taste
Cooking spray
Combine all ingredients except cooking spray in bowl. Coat nonstick
skillet or griddle with spray. Spoon mixture by large tablespoons
into pan; flatten latkes slightly with spatula. Cook for 4 minutes
on each side, or until golden brown. Drain on paper towels and serve
immediately.
Makes about 12 latkes.
