Vegetable Kugel

makes 9 muffins

1/2 cup margarine, melted

1 cup granny smith apple, grated

1 cup peeled sweet potato, grated

1 cup carrot, grated

1 cup matzo meal

1 tsp. coarse salt

1 tsp. baking soda

1 tsp. ground cinnamon

1/4 tsp. nutmeg

1/2 cup sugar or Splenda

Heat oven to 325 degrees F. Lightly brush a 12-cup muffin tin with vegetable spray. Set aside. In a medium bowl, combine all ingredients. Stir to combine. Divide evenly between 9 of the muffin tins, leaving 3 empty.

Cover with parchment paper and aluminum foil. Bake for 30 minutes. Increase oven temperature to 350 degrees. Remove paper and foil and continue to bake until firm and dark golden brown, 5-10 minutes. Serve immediately.
