2 1/2 cups flour
1 heaping tsp. baking powder
3 whole eggs
3/4 cup sugar
3/4 cup oil
1 Tbsp. lemon juice
1/2 cup walnuts, cut up

Place oil in pan. Mix ingredients. This batter is loose, cannot use hands. Pour this quickly into two strips on oblong pan. Shape with spoon or spatula into two loaves, working quickly. Bake at about 350 degrees for about 20-30 minutes. When cooled slice and toast.

Diabetic variation: instead of sugar use 6 Sweet'n Low packets, 1/2 cup oil and 2 cups flour
