Tropical Pizza Recipe

 

Tropical Pizza 

1 (18-ounce) roll refrigerated ready-to-slice sugar cookie dough
1 (8-ounce) package fat-free cream cheese, softened
1/3 cup sugar
1 teaspoon coconut extract
1 cup frozen fat-free whipped topping, thawed
1 1/2 teaspoons grated orange peel
1 (26-ounce) jar mango slices, drained
1 (16-ounce) can pineapple slices, drained
1 (11-ounce) can mandarin orange slices
1/4 apricot preserves
1 tablespoon orange liqueur, optional
2 tablespoons coconut, toasted, optional

1) Preheat oven to 350 degrees F. Spray a 12- to 14-inch pizza pan with nonstick cooking spray. Press cookie dough into prepared pan and bake 12 minutes. Cool.

2) In a mixing bowl, beat cream cheese, sugar and coconut extract until
smooth. Stir in whipped topping and orange peel. Spread mixture over cooled crust, leaving 1/2-inch of edge uncovered.

3) Arrange mango slices around edge of pizza, then make a circle of pineapple slices and fill in the center with mandarin oranges. In a small saucepan or in the microwave, heat apricot preserves with orange liqueur, if desired, just until melted. Spoon glaze over fruit and sprinkle with toasted coconut, if desired. Refrigerate if not serving immediately.

Makes 12 servings
