WW Rhubarb Sauce
4 C fresh or unsweetened frozen rhubarb, cut into 1 inch pieces
1 1/2 C. wild raspberry (or strawberry) flavored diet beverage (like Faygo)
*sweetener to = 1/4 C. sugar
1 pkg raspberry ( or strawberry) low calorie gelatin
In saucepan cook rhubarb and 1 cup beverage until tender. Take off heat.
Soften gelatin in 1/2 cup beverage, add to rhubarb, stirring until mixed.
Cool and divide into 4 servings.
1 serving: 1 vegetable and 8 optional calories
* I doubled recipe using 16 oz. Faygo and "no sugar".
