Easy Cherry Cheesecake
1/2 cup heavy cream
1 tablespoon fresh lemon juice
1 teaspoon vanilla extract
4 ounces cream cheese, cubed
1/2 cup sifted confectioners' sugar
1 (9-inch) graham cracker pie shell
1 (15-ounce) can cherry pie filling
Process the whipping cream, lemon juice, vanilla, cream cheese and
confectioners' sugar in a blender until smooth and thickened. Pour
into the graham cracker pie shell and top with the cherry pie
filling.
Yield: 8 servings. |
