White Texas Cake
2 cups sugar
1/2 cup shortening
2 egg whites
2 cups flour
1 teaspoon soda
1 teaspoon salt
1-1/2 cups buttermilk
1/2 teaspoon teaspoon almond extract
1 teaspoon vanilla extract
Icing:
1 stick margarine
1 tablespoon vanilla extract
1/3 cup buttermilk
1 box (16 ounces) powdered sugar
1-1/2 cups coconut, flaked
1 cup chopped pecans
Cream shortening and sugar. Add beaten egg whites. Mix together
flour, soda and salt. Add to creamed mixture, alternately with
buttermilk and flavorings. Pour into greased and floured 17x11-inch
jelly roll pan. Bake at 350 degrees for 20 to 25 minutes. For icing,
melt margarine, add buttermilk and rest of ingredients. Mix well and
spread on cake after it has cooled 5 minutes.
Makes 20-24 servings. |
