Boulevard Inn Red Cabbage
4 ounces salt pork
1 small onion
1/2 cup water
1 cup vinegar
1/2 cup packed brown sugar
1 cup sugar
1 cup applesauce
2 whole cloves
2 heads red cabbage, shredded
Combine salt pork and onion and grind together until coarse. In small saucepan,
add to water and simmer until soft, about 30 minutes. Add remaining ingredients
except cabbage. Put cabbage in large saucepan, then top with pork/onion mixture.
Cook until cabbage is bright purple and still crisp.
Makes about 12 servings.
