Casa Del Lago Spring Vegetable Pasta Salad

1/2 Medium Zucchini, Julienne
1/2 Medium Yellow Squash, Julienne
1/2 Medium Carrot, Julienne
1/4 Large Red Bell Pepper, Julienne
1/2 C. Extra Virgin Olive Oil
1 T.. Minced Garlic
1/2 Pound Tri-color Pasta
Salt and Pepper to taste
Feta Cheese, Tomatoes or Basil
Chopped parsley

Prepare pasta as directed on the package.
In a large skillet heat Olive Oil,
Add garlic and lightly roast for approximately 30 seconds.
Add carrots and cook for 1 minute,
Add all remaining vegetables and cooked pasta and saut� for 2-3 minutes.
Divide into equal servings.
Garnish with shaved Feta Cheese and copped parsley, or fresh herbs of your preference.

Serves 4.
