Common Grill Stuffed French Toast
6 pieces egg bread, 1" thick
2 tablespoons powdered sugar, for garnish maple syrup
Streusel Topping
1/2 C. toasted, sliced almonds
1/4 C. brown sugar
3/4 C. rolled oats
1/2 C. flour
1 t. cinnamon
4 T. butter, softened
Batter
1 C. milk
3 eggs, beaten
1/4 t. cinnamon
1/4 t. vanilla
1/4 C. sugar
French Toast Stuffing
4 T. butter
1/4 C. sugar
2 T. water
6 ripe bananas, mashed
1 1/2 C. peaches, sliced and peeled
Streusel Topping:
Combine all ingredients in small bowl. Mix thoroughly. Set aside.
Batter:
Combine all ingredients in mixing bowl. Mix thoroughly. Set aside.
Preheat oven to 350�F.
French Toast Stuffing:
Heat butter in saut� pan. Add sugar and water and cook until sugar begins to
caramelize. Add bananas, stirring to thoroughly coat. Add peaches and continue
cooking until bananas and peaches are caramelized, approximately 6 to 8 minutes.
Cool.
Lay piece of bread flat on cutting board. Beginning on the right side, slice
bread through horizontally from right to left leaving 1/2" uncut on left side.
Carefully fill each piece of bread with 1/4 cup of the French Toast Stuffing.
Gently lay bread in batter. Allow to rest for 1 minute. Carefully turn bread to
other side and allow to sit for one additional minute in batter.
Transfer bread to saut� pan and cook on both sides on medium heat until golden,
approximately 2 to 3 minutes on each side.
Sprinkle each piece of toast with 2 tablespoons of Streusel Topping and place in
oven for 6 to 8 minutes or until topping browns.
Sprinkle with powdered sugar and serve with maple syrup.
