Garduño’s Margarita Factory Seafood Pan Roast

3 oz. to 4 oz. seafood (i.e. shrimp, lobster, scallops, etc.)
1 T. jalapeño butter
1 T. cilantro, chopped
1 t. fresh parsley, chopped
1/2 C. pico de gallo
1/4 C. Hatch green chiles, diced
1 C. white wine
1/2 t. paprika
1/4 t. white pepper
1/4 t. salt
1 C. heavy cream
1 t. lobster or clam base
1 C. fish stock

Sauté seafood in jalapeño butter for 1 to 2 minute. Add cilantro, parsley, pico de gallo and green chiles. Sauté 1 minute and 30 seconds. Add wine, paprika, white pepper and salt; bring to a vigorous boil. Stirring occasionally, reduce heat and simmer 5 minutes. Serve with steamed rice.
