Mangia Fresh Mozzarella, Tomato and Cracked Black Pepper on Focaccia
1 lb. fresh mozzarella
2 ripe beefsteak tomatoes
6 focaccia rolls
3 T. extra-virgin olive oil
1 T. salt
2 T. freshly cracked black pepper
Slice the mozzarella as thin as possible. Wash, then slice the tomatoes as thin
as possible. Slice rolls in half. On each bottom half, alternate 1 slice of
mozzarella, then 1 slice tomato until bread is covered. Drizzle with olive oil,
sprinkle with salt and pepper and cover with top of the roll. Slice in half and
serve.
