Meridian Café's Ghirardelli Double-Chocolate Brownies
2 eggs, lightly beaten with a fork
3/4 cup sugar
1 teaspoon vanilla
1/4 cup unsalted, unsweetened butter, melted
1/4 cup vegetable oil
3/4 cup Ghirardelli sweet ground chocolate (see note)
1/2 teaspoon baking powder
1 cup all-purpose flour
1/4 teaspoon salt
1/4 cup water
1/3 cup Ghirardelli milk chocolate chips (available in most grocery stores)
Preheat oven to 300 degrees. Grease an 8-inch square baking pan; set aside.
Mix together eggs, sugar and vanilla. Stir in butter and oil.
In a separate bowl, combine sweet ground chocolate, baking powder, all-purpose flour and salt. Add these to egg mixture, with water. Fold in chocolate chips.
Bake 30 to 35 minutes, or until top has puffed and is firm to the touch (a longer baking time will give a cakelike brownie).
Allow to cool. Cut into squares.
Makes one 8-inch square pan.
Note: Ghirardelli sweet ground chocolate, as the name implies, is baking cocoa that has been sweetened. Unsweetened baking cocoa will not work in this recipe. Sweet ground chocolate can be found in most large grocery stores. Usually, it is stored with the ingredients for baking.
