Mission Inn�s Mahi Mahi

1 (8 oz.) mahi mahi fillet
2 tablespoons olive oil
2 tablespoons pineapple juice
2 tablespoons soy sauce
1⁄2 tablespoon sake
1⁄2 teaspoon brown sugar
1⁄2 tablespoon minced garlic
1 tablespoon minced lemon grass
1⁄2 tablespoon grated ginger
Salt and Pepper, to taste
Place the mahi fillet in a shallow pan and set aside. In a small
bowl, whisk together the liquid ingredients, then add the dry
ingredients, and whisk until thoroughly mixed. Add salt and pepper
to taste.
Pour the mixture over the mahi fillet and set aside in the
refrigerator for 10 to 20 minutes. Saut� the mahi fillet over medium
heat for approximately 10 minutes to the desired temperature. Serve
with fruit salsa.
Mission Inn�s Tropical Fruit Salsa

4 teaspoons brown sugar
1⁄4 cup rice wine vinegar
1⁄2 cup soy sauce
2 ounces diced pineapple
1 ounce diced bell pepper
1 ounce grated peeled ginger
1 ounce diced red onion
4 teaspoons chopped cilantro
Dissolve the sugar in the rice vinegar and soy sauce. Add the
remaining ingredients and set aside. Set the mahi on a serving plate
and garnish attractively with the fruit salsa. |
