Mondo's Mediterranean Pesto
1 C. Kalamata olives, pitted
1 C. Ni�oise or Provencale olives, pitted
1 C. sundried tomatoes, softened
4 cloves garlic, minced
1 shallot, minced
1/2 C. fresh basil, chopped
1/2 C. fresh oregano, chopped
1/2 C. pine nuts, toasted
1/4 C. parmesan cheese, grated
Olive oil as needed
Combine ingredients (except olive oil) in a large blender or food processor.
Pulse on and off while adding olive oil, until a thick paste is formed. Serve
with seared tuna or other seafood.
