Mr. B's Restaurant Peanut Butter Pie
3 egg yolks
1/2 cup cold water, plus 2 1/2 cups water (divided)
1/2 cup powdered milk
1 rounded cup vanilla pudding mix (a little over 2 packages)
3 cups whipped topping (divided)
1/2 cup creamy-style peanut butter
1 cup powdered sugar
1 10-inch baked pie shell
In medium bowl, combine egg yolks, 1/2 cup cold water, powdered milk
and pudding mix. Blend well.
In large pan, bring remaining 2 1/2 cups water to boil. Add pudding
mixture and cook over medium-high heat until thick. Set mixture
aside to cool. When pudding is cool, add 2 cups of the whipped
topping and blend well.
In another bowl, combine peanut butter and powdered sugar. Put half
the peanut butter mixture in the pie shell; press into place. Pour
pudding mixture over peanut butter mixture. Top with remaining 1 cup
whipped topping.
Crumble remaining peanut butter mixture and sprinkle over top of
pie. Chill 1 to 2 hours or until firm. Makes 8 servings.
