Old Town Tortilla Factory Tomatillo Chicken
1 quart tomatillos
1 medium onion, diced
1 T. minced garlic
1-1/2 quarts chicken stock
2 serrano chilies
1/4 C. lime juice
1 C. chopped cilantro
6 cooked chicken breast halves
Soak tomatillos in warm water for 5 minutes. Meanwhile, saut� onions in 1 Tbsp.
olive oil until translucent, about 5 minutes. Add garlic and continue to saut�
another 3 minutes.
Add chicken stock, tomatillos (papery husks removed), serranos and lime juice
and simmer over medium heat for 10 to 12 minutes. Remove from heat and puree
with hand blender, regular blender or food processor.
Stir in chopped cilantro and season with kosher salt and freshly cracked black
pepper. Pour over or around grilled or baked chicken breasts and serve with
white rice and fresh tortillas.
