Pulcinella's Italian Dressing
1/2 green bell pepper, diced
1 small onion, diced
1 small tomato, diced
1 stalk celery, sliced
2 to 3 Greek olives, pitted
5 T. red wine vinegar
3 T. ketchup
1 1/2 C. extra virgin olive oil
salt and pepper, to taste
Place bell pepper, onion, tomato, celery, olives, vinegar and ketchup in a food
processor or blender, and pulse until very finely chopped but not smooth. With
motor running, slowly add the olive oil, blending until emulsified. Season to
taste with salt and pepper.
Makes 3 cups.
