The Fairview's Corn Pudding
4 c. canned creamed corn
1/2 c. light cream
4 large eggs, lightly beaten
2/3 c. melted butter
2/3 c. flour
1 t. each kosher salt and pepper, or to taste
1/3 t. nutmeg
Preheat the oven to 375 degrees.
Spray an 8-inch-square glass baking pan with nonstick cooking spray.
In a mixing bowl, place the corn, cream, eggs and melted butter. Mix gently to combine. Stir in the flour, salt and pepper.
Bake for 25 minutes. Remove from the oven and sprinkle the top with nutmeg. Return to the oven and bake 15 minutes more, until golden brown and soft. Serve warm.
