The Fireplace's Chocolate Banana Bread Pudding
1 loaf milk bread or brioche
1 lb. semi-sweet chocolate orchocolate chips
1 1/2 c. sugar
1/2 bunch mint
14 eggs
1 1/2 qts. heavy cream
3 overly ripe bananas
Trim the crust from the bread, then break bread into very small
pieces. Either use a knife to break up the chocolate into similar
size pieces or use chocolate chips.
Combine bread and chocolate in a bowl and toss. Roughly chop the mint
and add to the bread.
In a separate bowl, whisk the eggs just enough to break them up. Add
the cream and sugar. Whisk enough to begin to incorporate the sugar
into the other ingredients.
Slice the bananas into approximately -inch thick rounds. Add the
bananas and the bread mixture to the egg mixture. Use a large spoon
to combine all the ingredients.
Spoon the batter into a well-greased baking dish. Cover with foil.
Bake at 350 degrees for one hour. Serve with fresh whipped cream and
seasonal berries.
Makes 6-8 servings.
