Treat's Own Morning Coffee Cake
For the cake:
1 C. butter
1 C. white sugar
1 C. brown sugar
2 T. baking powder
1 t. salt
2 C. plain yogurt
4 eggs
1 T. vanilla
3 C. fresh berries or seasonal fruit, such as apple, cut into chunks
4 C. unbleached white flour
For the vanilla glaze:
2 C. confectioners' sugar
1 T. vanilla
Heavy cream, as needed
To make the cake: In the bowl of an electric mixer, cream the butter with the
white and brown sugars. Blend until creamy. Add the baking powder and salt. Mix
well. Add the yogurt, eggs and vanilla. Mix well. Add the berries or fresh
fruit, mixing just enough for an even distribution throughout the very wet
batter. With the mixer on low, add the flour. Mix just enough for a rough
batter.
Pour the batter into a well-greased 9-by-11-inch cake pan. Bake at 325 degrees
for 45 minutes, or until the cake is firm to the touch. Let cool.
To make the glaze: Place the confectioners' sugar in a mixing bowl. Add the
vanilla and enough cream to create the consistency you like. For more of a
frosting, add 1/4 to 1/2 cup; for more of a glaze, add 1/2 to 1 cup. Pour over
the top of the cake and serve.
Makes 8-12 servings.
