Inside-Out Ravioli
1 pound lean ground beef
1 package frozen spinach, thawed
2 cloves of garlic, chopped
1/2 onion, chopped
1 teaspoon salt
1/8 teaspoon nutmeg
1/8 teaspoon pepper
1-12 ounce bag wide egg noodles, cooked and drained
1 tablespoon olive oil
1/2 cup dried bread crumbs
1-26 ounce jar spaghetti sauce
1-8 ounce can tomato sauce
2 eggs, beaten
1-8 ounce bag shredded cheddar cheese
1-8 ounce bag shredded mozzarella cheese
Saute onions and garlic in olive oil, add ground beef and cook until beef is
browned; drain. Mix with fork until well crumbled. Season with salt, pepper and
nutmeg.
Stir in spaghetti sauce and tomato sauce; simmer for 10 minutes. Squeeze water
out of the spinach and chop. Add bread crumbs, cheddar cheese and eggs. Add
cooked noodles and mix well.
In a greased 9 x 13 inch pan, add half of the pasta mixture. Top with half of
the meat mixture. Repeat with another layer of pasta mixture and meat mixture.
Cover pan with aluminum foil and bake in a preheated 350 degree oven for 40
minutes. Uncover and spread mozzarella cheese over the top; return to the oven
for 10 minutes. |
