Olive Rice Balls
1 1/2 cups cooked rice
1/2 cup shredded Cheddar cheese
1/4 cup sliced green onions
1/4 cup finely chopped ripe olives
1/4 cup Italian-style bread crumbs
1/4 teaspoon salt
1 egg, beaten
1 teaspoon lemon juice
1/8 teaspoon hot pepper sauce
paprika for garnish
Combine rice, Cheddar cheese, onions, olives, bread crumbs, salt, egg lemon
juice and pepper sauce in large mixing bowl. Shape mixture into 1-inch balls;
place on well-greased baking sheet.
Bake at 375 degrees 10 to 15 minutes. Serve warm.
Makes approximately 2 dozen rice balls
