Chipotle Rubbed Beef Ribs Recipe

Chipotle Rubbed Beef Ribs 5 lbs. beef back ribs 4 C. beef stock 1 medium onion sliced thin 1 bottle dark beer 1 T. garlic minced 1 t. thyme 1/2 t. Chipotle powder 3 t. salt 1/2 C. molasses 3 T. balsamic vinegar 2 T. Tabasco sauce In a 5 quart Dutch oven combine beef broth, onions, beer, garlic and 1 t. salt. Rub the ribs with the thyme and chipotle powder. Add to the Dutch oven and bring to a simmer. Cover. Set the Dutch oven in a 350�F oven for about 1 1/2 hours. Remove from oven and cool ribs in liquid. Remove ribs and reduce liquid to about a cup and reserve. Mix together the reduced broth from the ribs, molasses, balsamic vinegar, Tabasco and remaining salt. Use as a sauce for the ribs. |
