Acorn Squash with Cranberries and Pineapple Recipe

1 acorn squash
1 can (8 oz.) pineapple chunks
1/4 C. fresh cranberries
1/4 C. raisins
2 T. chopped walnuts
1 apple chopped
1 1/2 T. melted butter
1/4 C. maple syrup
1 t. cinnamon
Half the squash (clean out seeds and fiber).
Bake in 400� for 30 minutes - cut side up.
Drain pineapples and save the juice. Simmer the cranberries in the pineapple
juice (add a little water if more liquid is needed) Add raisins, cook briefly,
then drain the liquid.
Mix the cranberries, raisins with the pineapple, apple, butter, maple syrup and
cinnamon and spoon into the squash.
Bake for another 10 minutes and then serve. |
