Baked Apple Pancake
4 tablespoons butter
1 cup flour
1 cup milk
1 teaspoon vanilla
1/2 teaspoon salt
1/4 teaspoon nutmeg
Turn oven to 450° and place cast-iron skillet in oven while
preparing ingredients. Cut apples into thin wedges.
In a heavy skillet melt 2 tablespoons butter and sauté apples.
Place flour, milk, eggs, vanilla, salt and nutmeg in blender in
order given. Blend until mixed.
Remove skillet from oven and melt remaining 2 tablespoons butter.
Quickly arrange sautéed apples in skillet and pour batter over

to 375° and bake 10 minutes longer.
