Chicken Pecan Basil Salad Sandwich Recipe

2 large boneless, skinless chicken
breast halves, fully cooked and diced
1/4 cup chopped pecans
1/2 teaspoon dried basil, crushed, or 1 teaspoon fresh basil, finely chopped
2 to 3 tablespoons diced Spanish onion
1 to 1 1/2 ribs celery, diced small
Juice from 1/4 lemon
4 tablespoons mayonnaise, or more to taste
1 scant tablespoon Dijon-style mustard
2 pinches salt
2 pinches pepper
In bowl, combine diced chicken, pecans, basil, onion, celery and lemon juice.
Add mayonnaise, mustard, salt and pepper. Place lettuce and tomato slices on
bread, and spoon chicken salad on top.
Makes 4 to 6 sandwiches.
Note: Do not use too much onion or mustard, or it will overpower the other
flavors. The other ingredient amounts are forgiving.
