Hip Hip Hooray Hilo Dogs Recipe

1 cup apricot preserves or orange marmalade

1/2 cup tomato sauce

1/4 cup sherry

1/3 cup cider vinegar

2 tablespoons soy sauce

2 tablespoons honey

1 tablespoon vegetable oil

1 teaspoon salt

1 teaspoon freshly grated ginger or 1/4 teaspoon ground ginger

1 can (12 ounces) pineapple slices, drained

2 pounds hot dogs

16 to 20 buns

In medium saucepan, combine preserves or marmalade, tomato sauce, sherry, vinegar, soy sauce, honey, oil, salt and ginger. Simmer gently 5 minutes.

Cook hot dogs slowly in skillet or on grill, then add to saucepan turning and basting with sauce until heated through and glazed (about 8 minutes).

The last few minutes, start grilling pineapple slices, basting with sauce. Heat remaining sauce and serve with hot dogs and grilled pineapple.

Makes 6 to 8 or more servings, if served with buns
