Pork Stew Recipe

1 1/2 lbs. pork boneless loin roast, cut into 1 inch cubes

3 medium carrots, cut into 1/4 inch slices

1 medium onion, chopped

2 C. 1/2 inch peeled parsnips

1 1/2 C. 1 inch cubes peeled butternut squash

4 C. chicken broth

1 T. chopped fresh or 1 t. dried sage leaves

2 t. chopped fresh or 3/4 t. dried thyme leaves

1/2 t. salt

1/2 t. pepper

3 T. all purpose flour

3 T. margarine or butter, softened

Mix all ingredients except flour and margarine in 4 to 5 quart crockpot. Cover and cook on low 6 to 7 hours or until pork is no longer pink and vegetables are tender.

Mix flour and margarine, gradually stir into stew until blended. Cover and cook on high 30 to 45 minutes longer, stirring occasionally, until thickened.

6 servings.
