Tipsy Toast

12 slices French bread, cut diagonally (about 1/2 to 3/4 inch thick)
6 eggs
2/3 cup orange juice
1/3 cup milk
1/3 cup Grand Marnier
3 Tablespoons sugar
1/2 teaspoon vanilla
1/4 teaspoon salt
Finely grated peel of one orange
Butter for frying

Filling:
One 8-ounce package cream cheese, softened
Sugar to taste (about 1 to 2 Tablespoons)
1 teaspoon grated orange peel
Pecans, chopped small

Topping:
One 6-ounce package frozen peaches, thawed and chopped
One 11-ounce can mandarin orange segments with juice
1/2 jar sweet orange marmalade

The night before, mix first 3 filling ingredients until well blended. Spread on 6 of the bread slices; sprinkle with chopped nuts and top with remaining 6 bread slices. Set aside. Blend together eggs, orange juice, milk, Grand Marnier, sugar, vanilla, salt, and orange peel. Dip all sides of "sandwiches" into egg mixture, being sure to coat well. Lay sandwiches in baking dish and pour any remaining egg mixture over all. Cover and refrigerate overnight.

Next day, remove dish from refrigerator at least half an hour before cooking. In the meantime, heat topping ingredients in pan until well blended and marmalade is completely melted. Keep warm. On medium hot griddle which has been buttered, fry each sandwich for about 8 minutes on each side until golden brown and cooked through. When all are done, cut diagonally and place on warm plates. Spoon fruit juice over tops and serve.

Serves: 6.
