Pumpkin Cake
1 box yellow cake mix
1/2 C. oil
1/4 C. water
4 eggs
1 C. pumpkin
1 t. cinnamon
1 t. nutmeg
1/2 C. sugar
Mix together and bake in a tube pan at 350� F. for 1 hour or until done. Remove
form pan and cool.
Frosting:
1 C. brown sugar
1/2 C. white sugar
2 T. flour
1 C. milk
2 T. butter
1/2 C. pecans or walnuts
1 C. flaked coconut
1 t. vanilla
Combine first 4 ingredients. Cook over medium heat, stirring constantly until
thickened. (225�F. on a candy thermometer) Add butter, stir until melted. Stir
in nuts, coconut and vanilla. When cool, frost cake.
