Oatmeal Spice Drops Recipe
1 1/2 cups sifted flour
3/4 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon ground cloves
1/4 teaspoon baking soda
3/4 cup shortening
1 1/4 cups firmly packed brown sugar
1 egg
2 teaspoons vanilla extract
3/4 cup canned pumpkin
1 3/4 cups quick or old-fashioned oats
3/4 cup salted sunflower kernels
1/2 cup raisins
Preheat oven to 375 degrees. Sift together flour, spices and baking soda. In a
large mixing bowl, cream shortening. Gradually add sugar, beating until light
and fluffy. Add egg and vanilla; mix well. Add pumpkin and flour mixture
alternately; beat until thoroughly blended. Stir in oats, sunflower kernels and
raisins.
Drop teaspoons of dough on ungreased cookie sheets about 1 1/2 inches apart.
Bake 15 minutes or until firm and golden brown. Remove from cookie sheets; cool
on wire rack.
Makes 4 dozen.
