Apricot Curry Glaze Recipe

Apricot Curry Glaze

1 medium onion, minced
1 tablespoon butter or margarine
1 cup pureed apricots (may use fresh or canned, or use "junior fruit")
1/2 teaspoon salt
1 tablespoon curry powder
4 teaspoons vinegar
2 tablespoons molasses

Combine all ingredients in saucepan. Cook and stir over medium heat for 15 minutes.

Makes 1 1/3 cup.

Use this on beef, pork, lamb or chicken.
